Are you constantly finding yourself eating the same thing every day? Well, not anymore!

Break that monotonous cycle and spice up your summer with some quick and easy summer wrap recipes. Wraps are made for those lazy summer days.

We specifically sourced these wrap recipes as they fit very well with our warm summers, local ingredients and South African tastes.  So go ahead and turn your lunch (or dinner) into something special with these mouth watering meals.

 

Avocado & Tuna Salad Wrap

Transform your favorite childhood sandwich into something more modern but with the same great taste. This wrap  is a tuna sandwich all grown up with added ingredients to elevate the flavour even more. With this recipe you get the familiarity of old and the exploration of something new.

Ingredients:

  • 1 medium avocado
  • lemon wedge
  • 1 (175g) can Tuna {drained}
  • 1 stalk celery, chopped
  • 2 green onions, chopped
  • 1/3 cup grape/cherry  tomatoes, quartered
  • 1 tablespoon mayonnaise
  • salt and pepper, to taste
  • salt free seasoning, to taste
  •  2 wraps
  • 2 green leaf lettuce leaves {optional}

Instructions

Remove avocado seed and spoon avocado out of its shell into a medium bowl. Squeeze lemon wedge over avocado and mix in. Add in tuna and mix. Add celery, green onions, tomatoes, and mayonnaise. Season to taste and mix completely.
Lay lettuce onto wraps and divide avocado tuna salad between tortillas. Roll up and slice. Serves two.

Bacon Cheeseburger Wraps

Bacon Cheeseburger Wraps have all the components of a bacon cheeseburger wrapped up in a flour tortilla. These are delicious! Laden in beef, cooked crispy bacon and warm melting cheese, this cheese burger wrap hits all the right notes.

Ingredients:

  • 500g lean ground beef
  • 5 slices cooked bacon, chopped
  • 1 Tablespoon Worcestershire sauce
  • 3 Tablespoons ketchup
  • 1 teaspoon dried minced onion
  • pepper and salt, to taste
  • 5 large wraps
  • shredded cheddar cheese
  • mustard
  • tomato slices
  • lettuce

Instructions

  1. Brown ground beef in a large skillet over medium-high heat. Drain any grease. Add cooked chopped bacon, Worcestershire sauce, ketchup, minced onion and salt and pepper to beef. Stir to combine.
  2. Reduce heat to low and let mixture heat thoroughly, about 5 minutes or so.
  3. Sprinkle some cheddar cheese down the center of each tortilla. Add a few heaping Tablespoons of the beef mixture on top of cheese. Drizzle a little mustard (and more ketchup, if desired) on top of the beef, and then add a couple tomato slices. Roll up each tortilla burrito-style.
  4. Place wraps, a couple at a time, onto a preheated indoor grill and grill for 3-5 minutes, or until cheese is melted. Carefully remove wraps from grill and place on a plate. Gently unravel wrap to add some lettuce. Re-roll wrap and then cut in center diagonally. Serve immediately and enjoy!

Ingredients:

  • 4 boneless skinless chicken breasts, pounded to about 10 – 15 mm thickness
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • salt and pepper to taste
  • 1/4 red onion, thinly sliced
  • 8 sliced pineapple rings (or 1 cup chopped pineapple)
  • 1/2 cup teriyaki sauce (my favorite store-bought brand is Kikkoman, or use the recipe below!)
  • 4 pita wraps
  • optional: sesame seeds, lettuce, mayo, tomatoes

Homemade Teriyaki Sauce

  • 1/2 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup brown sugar
  • 1 tablespoon honey
  • 3/4 teaspoon ground ginger
  • 1 teaspoon minced garlic

Instructions

  1. Preheat grill to medium heat. Season chicken breasts with garlic powder, chili powder, and salt and pepper to taste. Grill for 5-8 minutes on each side until chicken is cooked through.

  2. Assemble wraps by placing a grilled chicken breast, onions, pineapple, and any other desired toppings on each pita. Top with teriyaki sauce and sprinkle with sesame seeds and cilantro if desired. Serve immediately.

  3. For the homemade teriyaki sauce whisk all ingredients together in a small sauce pan. Stir constantly while bringing to a boil. Boil for 1-2 minutes. Reduce heat and transfer to a heat-safe bowl to serve.

Healthy and delicious Hummus and Veggie wraps perfectly suited for vegetarians. A simple recipe ready in a matter of minutes. Pack your flour tortillas with your vegetables of choice. That, and a load of hummus equals a great meal and an even better summer.

  • 2 large wraps
  • 1/2 cup hummus
  • 1/4 cup grated cheddar cheese
  • any veggies you like: cucumber carrot, peppers, onion, baby kale, spinach, tomatoes, etc.

Ingredients:

  • 1/4 c. plus 2 tbsp. extra-virgin olive oil, divided
  • Juice of 3 lemons, divided
  • cloves garlic, minced
  • 1 tsp. Italian seasoning
  • Pink salt
  • Freshly ground black pepper
  • 500g boneless skinless chicken breasts
  • 1/2 c. plain Greek yoghurt
  • 1/2 tsp. paprika
  • Hot sauce, to taste
  • Pita bread
  • Butterhead lettuce
  • Sliced tomatoes

Instructions

  1. Make marinade: In a small bowl, whisk together 1/4 cup oil, juice of 2 lemons, garlic, Italian seasoning, salt, and pepper. To a large zip-seal plastic bag, add chicken breasts and marinade and toss to coat. Let marinate for at least 30 minutes and up to 4 hours.
  2. In a large skillet over medium-high heat, heat remaining two tablespoons oil. Add chicken breasts and cook until golden and cooked through, about 8 minutes per side. Remove from pan and let rest a few minutes, then slice.
  3. Make spicy yoghurt sauce: In a small bowl, mix together yoghurt, hot sauce, remaining lemon juice, and season with paprika and more salt.
  4. Assemble wraps: To a piece, add lettuce, tomato, chicken slices, and drizzle with spicy yoghurt sauce. Wrap in a piece of parchment and serve.
